Invert Sugar Syrup is an aqueous form of equimolecular ratio of Glucose and Fructose. The product is made by catalytic hydrolysis of natural sugar (Sucrose) into monosaccharides, followed by decolourization, deionization and finally vacuum evaporated to desired concentration. It is around 20% sweeter than table sugar.
The sweetness intensity of Glucose and Fructose is different than that of sucrose. Where are Sucrose has a lingering taste, the sweetness intensity of Fructose reaches its peak in a very short span of time and diminishes quickly. This property of fructose helps invert sugar to enhance the other flavors in the products. The term invert originates from effect on the Polarimeter, traditionally used to analyze Sucrose solution. The mixture of glucose and fructose inverts the plane of polarized light as compared to pure sucrose. That's why the product is named as invert sugar.
